All day breakfast


Ingredients: serves 2

• 2 rashers bacon
• 10 ml rapeseed oil (or light vegetable oil)
• handful mushrooms
• 4 eggs (beaten)
• 2 tsp milk
• fresh herbs
• black pepper (freshly milled)


Method:

In a heated pan, dry fry any meats to cook (or reheat) thoroughly and set aside. Cut sausage and snip bacon into bite sized morsels if wished.
Place the oil in the empty frying pan and sauté mushrooms until soft and cooked.
Return meats to pan, placing any tomato chunks among the mushrooms. Distribute ingredients evenly around the pan.
Whisk the milk into the beaten eggs, adding pepper and herbs.
Pour the egg mix into the hot pan, swirling it to cover the base, and allow it to set completely. As the egg cooks it will set the ingredients in place.
Turn the large 'omelette' onto a plate and share between 2.

To serve:

Turn large omelette onto a plate and share between 2 people. Serve with wholemeal bread for extra energy.
