French Toast & Honey

Stale bread can be resurrected with this wonderful breakfast treat. Serve with generous spoonfuls of Greek yoghurt.

Serves 2

2 small eggs (lightly beaten)

150ml warm milk

1 pinch of ground cinnamon

1 pinch of ground cardamon

1 pinch of ground nutmeg

1 pinch of dried ground cloves

2 slices stale bread (cut into triangles)

25g unsalted butter

50 ml honey

 

Method:

  1. Mix together the eggs with the milk and spices. Put the bread slices into a shallow container and cover with the milk mixture; leave the bread to soak for 5 minutes.
  2. Heat a large non-stick frying pan and add the butter. When the butter is frothy, add the bread slices and fry over a igh heat for 1 minute on each side. When they are golden on both sides drizzle with honey and serve immediately.

 

Recipe tips

Bread that seems slightly past its best can be revived by warming or toasting.
